Every man has his own way of eating yogurt.
The author of "Yogurt Making (Yoğurtçuluk)" Osman Ferid thought it worth beginning his guide to yogurt with the above Turkish proverb about individuality. And while Ferid does present yogurt as an old and timeless technology, he acknowledges that no two yogurts are quite the same and that every society has its own way of doing things in offering a patriotic overview of the history, science, and methods behind what he calls Turkey's national food. All-in-all it's a decent guide to genuinely homemade yogurt for readers of Ottoman. It also offers some interesting comments on the early spread of yogurt into Europe and the Americas.
